Black tea

The golden brown tea with the strong flavour

When black tea ferments the moisture in the cells is oxidised when it discharges as the leaves are processed and it comes into contact with the oxygen in the air. The originally green leaves become darker. Fermentation is not just responsible for the colouring, the chemical reaction also gives black tea its typical strong flavour and the characteristic colouring of the infusion from golden to deep brown.

Characteristics of black tea

  • Black tea can be brewed for two to three minutes and then it has a stimulating effect
  • If it is allowed to brew for five minutes or more it has a relaxing effect but is more bitter, which is not to everyone's taste
