The shimmering rarity from Asia
White tea is a real rarity. It mainly comes from South China and Taiwan. Only the youngest leaves and closed buds are harvested by hand. These are then weakly fermented for a short time. They can be recognised by their lightly shimmering, slightly hairy leaf tips. The taste of white tea lies somewhere between that of green and black tea.
Characteristics of black tea
- The water should not be too hard or too hot. 75°C is the ideal water temperature
- Like green tea, white tea can and should be infused a number of times
- The brewing time is between one and four minutes
